Rock Cornish Game Hens with Rice “Stuffing”

Ingredients:

  • 2 cups beef broth
  • 1 cup uncooked long grain rice
  • 3 celery stalks, chopped
  • 1 onion, chopped
  • 1/4 tsp garlic salt
  • 3 Rock Cornish hens
  • tbs honey
  • salt and pepper to taste

Directions:

  1. In an 9×11 baking dish, combine broth, rice, celery, onion, and garlic salt.
  2. Place hens on rice mixture and brush with honey. Sprinkle with pepper and and salt. Cover and bake at 350 degrees or 1 hr. Uncover and bake 45-60 minutes longer or until juices run clear.
